Cheese Rounds AKA Cheese Scabs…
...but I think “Rounds” sounds so much more delicious. These are a favorite at Farm Dad’s family. I am requested to make them every year at Christmas time, but they are good to eat year around.
What you need:
1 Block of cheese of your choice (I have to confess I have only made these with sharp or mild cheddar, so I’m not sure how it will turn out with other varieties).
Slice the cheese into about 1 inch squares, about ¼ of an inch thick.
Arrange on a cookie sheet 2” apart. Bake in a 375 degree oven for 16-18 minutes.
Let cool on cookie sheet for a moment. Transfer to a cooling rack until cooled completely. Store in an airtight container until ready to serve.
Eat plain or top with your favorite dip. We like French Onion, Guacamole, Sour cream, and salsa.
