Gumdrops
My mother always made these at Christmas time when we were children. They can, of course, be made anytime, but this Farm Family has carried on the Christmas time tradition. The children love these gummy sweet treats.
For one batch you will need:
1 1/3 cups of applesauce
2 envelopes of unflavored gelatin
2 cups of sugar
1 6 oz. package of flavored gelatin (we use red and green at Christmas time)
1 tsp. of lemon juice
Mix ingredients together and bring to a boil. Boil 1 minute.
Fill loaf pan with water and pour out. Pour mixture into wet loaf pan, let set in refrigerator until set.
Cut into squares.
Roll in sugar.
Tips: This is very sticky to cut into squares. I keep a glass of warm water nearby and dip my knife into the water every few times I slice. I also, use a little serving spatula to help get the pieces out of the loaf pan neatly.
The farm children love to help roll these treats into the sugar. It’s fun, but be prepared to clean up granulated sugar off the floor…a small price to pay for making a wonderful, lasting memory.
These sweets look super great on a tray at Christmas parties. I also use them for garnishes on other desserts by cutting them into holly looking shapes.
